Native Flora: Elderflower 2021

Mixed Fermentation Saison Infused w/ Local Elderflower

A 3 barrel blend of blonde wild ale with an average age of 18 months in oak, infused with local elderflower picked from Walthamstow Wetlands.  Elderflower was picked first thing in the morning to preserve the delicate aromatics and infused with the beer during transfer from blending tank to the bottling tank where it was packaged a few hours later. Elderflower dominates the aroma while the taste is more floral with wildflower honey, pineapple  and a small amount of oak character.  There is a perceived sweetness but this beer is very dry with a very gentle acidity.

Blonde Wild Ale. Alc 7.2% Vol

This is a three barrel blend of blonde wild ale fermented by and aged on our wild London yeast for an average age of 13 months in oak. This blend has a herbal elderflower nose with a hint of oak and ripe stone fruit. The overall acidity of this blend is a little lower than previous blends, which is what we were shooting for in order to up the drinkability. The flavour is big on ripe stone fruit with a hint of bitterness in the background, which transitions into a hint of green peppercorn and a light tangerine citrus before finishing crisp and dry.

Dark Wild Ale. Alc 6.3% Vol

This is a three barrel blend of dark wild ale fermented by and aged on our wild London yeast for an average age of 11 months in oak. The aroma of this particular blend is incredibly malt driven with a beautiful intermingling of almond and hazelnut that fades into a dehydrated fruit sweetness akin to raisins. The perceived acidity of this blend for us is slightly lower than the two previous, falling somewhere in the low to medium range. the flavour starts off on the fore pallet with a rich hazelnut and sherry combination, followed by a good hit of chocolate and lightly roasted coffee before finishing with hints of tart red apple and cola.

Produce & Provenance Chardonnay 2020

Wild Ale Refermented on Whole Chardonnay Grapes 8.8%

A three barrel blend of blonde wild ale fermented by and aged on our wild London yeast for an average age of 13 months in oak & then carbonically macerated on freshly picked 2020 Chardonnay grapes for a further 3 months. The aroma of this beer is green apple skin, hint of noble hop grassiness. The percieved acid level of this beer is relatively moderate with gentle appply malic acid mouthfeel. The flavour of this beer has a clean buttery tang consistent with warm climate chardonnays with a hint of crisp cider apple crunchiness. This apple character slowly fades into a touch of white peach before finishing with a whiser of tannin and a hint of stemmy wood.

Reburied Damson Plum

Wild Ale Refermented on Second Use Damson Plums 7.2%

A two barrel blend of blonde wild ale fermented by and aged on our wild London yeast for an average age of 13 months in oak & then carbonically macerated on second use damson plums from 2020 for another month in fruit tank. The aroma of this beer is bursting with oak, vanilla, a touchy of hibiscus and a light quince paste sweetness. The perceived acid level of this beer for us was light to moderate with a desert sweetness balancing out most of the acid from the fruit. The flavour of this beer starts with a large plum jam character upfront that transitions into a combo of citrus and vanilla through the mid palate that reminds me of coke bottle confectionaries before finishing velvetty smooth and creamy.

Skin Contact Chardonnay 2020

Wild Ale Refermented on Chardonnay Grapes. Alc 7.7% Vol

A two barrel blend of blonde wild ale with an average age of 17 months in oak that was racked onto 250kg of spent 2020 Chardonnay skins and stems for a further month. The aroma is packed full of a delicate balance of bretty phenolics, musty oak and hessian with a green apple and grape skin. The flavour kicks off with the bright pineapple notes we expect from working with this grape varietal before giving us a flash of crisp green cider apple, a light green stemminess and finishing with a hint of limoncello.

P&P: Damson Plum

Wild Ale Refermented on Whole Damson Plums 6.6% 

 

A three barrel blend of blonde wild ale fermented by and aged on our wild London yeast for an average of 24 months in oak. Refermented on freshly picked damson plums from Green Acres Farm.

The aroma reminds of plum sauce with a hint of fresh, seedless, crimson grapes; as it warms the delicate phenolics from the plum skins open up. The flavour of this beer is dominated by the incredible damson plum fruit character from the very high fruit to beer ratio. It starts rich and almost reminiscent of quince paste before being met by a refreshing acidity, mellowing into fresh plum and finishing with a touch of tannin.
